Establishing a healthy diet that can be maintained over time has to involve substitution rather than elimination. This is one of the reasons why skipping meals doesn’t usually help to maintain a healthy weight – because our bodies will find ways to make up for a perceived deprivation of food.

The human body runs on food. Where once, food shortage was the major concern, after the Second World War, technological advances in food production led to a new era that was characterized by an overabundance of inexpensive food and relatively little physical activity.
